Bite-Sized Histories is a series from The Foodscapes Collective that explores national or regional dishes through the voices of those who know them best. Each article unpacks the cultural, historical, and social roots of a dish, showing how food carries meaning beyond the plate.

At the end of every story, you’ll also find a recipe—so you can cook along and bring the narrative into your own kitchen.

Want to Contribute?

We welcome writers, cooks, scholars, and storytellers to share articles about their country’s national dish. Whether you’re drawing from research, family traditions, or personal experience, your perspective matters.

Each contribution typically includes:

  • A story about the national dish and its cultural significance.
  • Insights into its history, traditions, and ingredients.
  • Length of 600-800 words
  • A recipe (traditional, adapted, or family-style) for readers to try.
